A crossword and Twinkie, Deconstructed chapters 1 and 2

The crossword was a bit larger than usual, but I was okay with my completion time.


I read the first two chapters of Twinkie, Deconstructed. Chapter one discussed why he was interested in starting a project like this - to figure out where all the ingredients of processed food come from, and chapter two was about wheat, the first ingredient in Twinkies.

I'm always surprised at the amount of different types of wheat. There's hard white, soft white, hard red winter, hard red spring, soft red winter and durum. The different between these six are mostly about the protein - more protein, the more elastic the dough will be.

I know that OYO whiskey is made from Ohio soft red winter wheat. Also, it is delicious.

Now I want to use the different types of flours in an experiment, but that will take a while. I'm currently out of flour, and so are my area grocery stores.
